Almost all toxic metals in the body are excreted through urine or feces, he says. And less than 1 percent are lost through sweat. In other words, you?ll do far more detoxifying in the bathroom than you ever could in a sauna.?

Meth heads aren?t likely the ones rapidly transitioning through sun salutations in 105 degree heat. They may need detoxing, but they?re not getting it at the gym.

PFCs are the synthetic chemicals we pick up from stain repellants on furniture, clothing, carpets and food packaging. One form, polytetrafluoroethylene, is the non-stick stuff on cookware. PFCs and other similarly structured persistent organic pollutants accumulate in the human body and are becoming an increasing public health concern. They?re implicated in liver toxicity, reproductive problems and nervous system dysfunction. It?s too bad the authors found that you can?t detox from these environmental toxins by turning up the perspiration.
Sweating through an intense workout at 110 degrees may be the hipsters obsession right now, but it doesn?t help much with detoxification.
On the other hand, there are known dangers of overheating?heat exhaustion, heat stroke, electrolyte depletion and dehydration. Opt for energetic workouts in 70 to 85 degree temperatures and sweat a little, but not too much. What it boils down to is that sweating isn?t really all that cool.

It?s that time again: the spookiest, sexiest, sugariest night of the year is almost upon us!
Halloween is THE BEST holiday. ?When else do we get a chance to bodily inhabit any fantasy we can dream up?? AND have fun with friends and family? AND eat candy? It?s distinct from other major American holidays because (at least in the way it?s celebrated in modern times) it?s inclusive; you don?t need to be a particular religion, nationality, gender, age, or to have a family or partner to enjoy the best things about it. True, it?s origin may have been a little different, but I?ll leave that tale to an historian instead of a lingerie designer.
It?s a night of lighthearted fun ? of surprise, delight, hijinks and gorging on candy.? But it?s also a night to think, at least a little, about how we women own and don?t own our bodies and our sexuality in day-to-day culture and life ? and how we can choose to shake up our body identities for one night.? On Halloween, even if we are not consciously engaging in debates about gender politics, or necessarily making our choices based on philosophy, all of us who dress up are faced on some level with the woman-specific question: to slut or not to slut.
When did Halloween become such a flesh fest?? According to a Slate article, the 1970?s.
Ever since the Victorians started gallivanting around at costume balls in the 19th Century, the holiday has been a costume event for children and adults.? But it wasn?t until New York City?s gay men threw the first big, fun, drag-filled Halloween parade in 1973 that the modern risque version of the holiday was born.? Now, THAT?S an origin story I love to tell.
Retailers of course soon realized the commercial opportunity, and now, forty years later, any nice suburban lady need only Google ?sexy nurse costume? to have forty busty, garter-belted options to buy.
Every year on Halloween I look around the streets of New York City, and I think, ?A leotard and spike heels is not a costume!?And neither are boobs!? Boobs are not a costume!?? I have mixed feelings about these women who choose to wear their sexuality AS their disguise for the night.? I equally question our culture that seems to encourage us into the Madonna/whore dichotomy of womanhood?so that we feel pressure to be buttoned up all year and then overflow in this one-night-only explosion of cleavage and fishnets.
Actually, scratch all this.? Maybe my main objection to these hypersexy interpretations of ?Halloween costume? is not as a woman, but as a fashion designer. ?Dressing up as ?Sexy? instead of as [fill in the blank] is a giant missed sartorial opportunity on Halloween night. Why not be both? ?Wear something that someone designed to look like SOMETHING other than sex. ?Look sexy and strong, or sexy and funny, or sexy and unique?or be a sexy monster (see below)!
A lot of the costume business overlaps with the lingerie world.? It makes sense that lingerie companies design and manufacture costumes since they already have expertise in the construction of related silhouettes.? So I thought I would troll the world of sexy costumes to come up with some recommendations that are sexy and strong. (Eds. Note: Click the photos to be taken to the costumes directly.)

A couple of months ago, I wrote a post about a book co-authored by a business school professor who argued that the entrenched ways that organizations think are stifling innovation. The problem is that a discussion of ?innovation? doesn?t resonate with a lot of IT leaders, because they think of it as nothing more than a buzzword. But there?s another keyword in the discussion that doesn?t cause any IT leaders' eyes to glaze over, and that no one relegates to buzzword status: ?growth.?
The book, ?The Physics of Business Growth: Mindsets, System, and Processes? by Ed Hess of the University of Virginia?s Darden Graduate School of Business, explains research he conducted along with co-author Jeanne Liedtka that shows that what many leaders think they know about growth is wrong. Using a gambling metaphor, Hess contends that when it comes to growth, most managers, sadly, are like the little old lady with a cup of quarters playing the slots: ?They just pull the handle and hope for the best.? Instead, he says, leaders need to take an approach more like that of a seasoned gambler. He highlights some characteristics of growth to understand in order to make that transition:
Growth is a probability game. When large organizations pursue growth, their mindsets are often completely out of sync with the reality that guides professional gamblers and VCs. Chances are that these organizations expect 10 out of 10 projects not only to win, but to win big. They demand that their managers and employees produce growth, inadvertently thwart their attempts, and uphold a system in which pulling the plug on a failed growth opportunity is a career-threatening act. Would-be growth leaders in this environment are like professional gamblers who are unable to act independently but instead receive instructions from on high ? from a source that has little information about what is happening this minute in this particular game. Not a formula likely to win in Vegas ? or in business. The reality is it takes on order of magnitude about 1,000 growth ideas to produce 100 good growth experiments. And doing 100 growth experiments may produce 10 viable growth initiatives worth investing in. Growth is an iterative learning process characterized by detours, zigzags, and remakes.
Growth is a learning process. Good growth organizations understand the realities of growth. Growth requires the right mindset ? a learning mindset ? and the right processes designed to make small bets, learn critical information quickly, and then assess next steps. We call that process Learning Launches. Not only is the right learning mindset needed, but also the right attitude is needed individually and organizationally about failure. When you are exploring growth ? when you are entering areas where you have not played before ? by definition you will make mistakes and have failures. Remember, so long as you make small bets and use the right rigorous process, there is no real failure so long as you are learning.
Growth can be messy and inefficient. Most organizations can?t stomach the uncertainty that comes with growth. It violates their dominant no-variance operational mindset. Well, guess what ? growth is a high-variance processes by its nature. If you do not accept that fact, then your growth initiatives will be limited to small, incremental improvements, which at some point will not produce enough growth to keep your stakeholders happy. Operational excellence strives for 99 percent defect-free performance. Contrast this to growth experimentation that can result in failure rates of 90 percent. In operational excellence environments, managers are rewarded for stamping out variance. Yet, in growth environments, variance is the norm.

ScienceDaily (Sep. 25, 2012) ? More than 20 European languages face digital extinction because of a lack of technological support, a study by Europe's leading language technology experts has found.
Scientists from The University of Manchester were part of a European team of researchers who concluded that digital assistance for 21 of the 30 languages investigated is 'non-existent' or 'weak' at best.
The report coincides with the European Day of Languages (http://edl.ecml.at/) on Sept. 26, a day which recognises the importance of fostering and developing the rich linguistic and cultural heritage of the continent.
Languages spoken by a small number of people could be at risk because they do not have technological support, the report by META-NET, a European network of excellence that consists of 60 research centres in 34 countries, including the University of Manchester's National Centre for Text Mining (NaCTeM), found.
Icelandic, Latvian, Lithuanian and Maltese are at the highest risk of disappearing, while other languages such as Bulgarian, Greek, Hungarian and Polish are also at risk. The researchers claim that 21 out of 30 European languages could become extinct in the digital world.
The study, prepared by more than 200 experts and documented in 30 volumes of the META-NET White Paper Series, assessed language technology support for each language in four different areas: automatic translation, speech interaction, text analysis and the availability of language resources.
Several languages, for example Icelandic, Latvian, Lithuanian and Maltese, receive this lowest score in all four areas.
While English has the best language technology support amongst all European languages, it can still not be considered as "excellent support," but rather only "good support," the University of Manchester researchers found in the White Paper for English.
Dutch, French, German, Italian and Spanish are considered to have "moderate support." Languages such as Basque, Bulgarian, Catalan, Greek, Hungarian and Polish exhibit "fragmentary support," which also places them in the set of high-risk languages.
Language technology software is used to process spoken or written human language. Well-known examples include spelling and grammar checkers, interactive personal assistants on smartphones (such as Siri on the iPhone), dialogue systems that work over the phone, automatic translation systems and web search engines.
The lack of available software for the high-risk languages means that without drastic action, they will be unable to survive in today's digital world.
Language technology systems primarily rely on statistical methods that require incredibly large amounts of written or spoken data -- difficult to acquire for languages with relatively few speakers.
Furthermore, statistical language technology systems have inherent limits on their quality, as can be seen, for example, in the often amusing incorrect translations produced by online machine translation systems.
The report concludes that a coordinated, large-scale effort has to be made in Europe to create the missing technologies and transfer this technology to the languages faced with digital extinction .
Professor Sophia Ananiadou, director of NaCTeM, said: "In the UK, most of us use software that incorporates language technology without even realising it.
"Language technology already makes our lives easier and has huge potential to help us in many different ways. As digital information and communication is becoming increasingly dominant, it is vital that sophisticated language technology support is available for a wider range of languages, otherwise collaboration with our European neighbours will become more difficult."
Professor Hans Uszkoreit, coordinator of META-NET, said: "The results of our study are most alarming. The majority of European languages are severely under-resourced and some are almost completely neglected. In this sense, many of our languages are not yet future-proof.

MOSCOW (Reuters) - Russian billionaire Alexander Lebedev was charged on Wednesday with hooliganism and battery over a televised punch-up and faces up to five years in jail in what he says is revenge for criticizing President Vladimir Putin.
The 52-year-old backer of British newspapers The Independent and London's Evening Standard, whose net worth was put at $1.1 billion by Forbes magazine in March, was also ordered by federal criminal investigators not to leave the country.
Lebedev, who owns a bank and a campaigning Russian newspaper, is rare among the so-called oligarchs in speaking out against the Kremlin and says he is a victim of a crackdown on dissent since Putin returned to the presidency in May.
He faces the same charge of hooliganism motivated by religious, political, racial, ethnic or ideological hatred as three women from the punk band Pussy Riot, who were jailed for two years in August after bursting into a Russian Orthodox church and belting out a profanity-laced anti-Putin protest.
"I know the position of the president," Lebedev, a softly-spoken former KGB spy, told Reuters in an interview on Tuesday in which he denied funding the opposition and said he had upset the Kremlin by campaigning against corruption.
"He thinks it is true that I have been funding (the opposition), so I was violating rule No. 1 - if you have money you should not interfere (in politics)."
Prosecutors opened an investigation into Lebedev last year over an incident in which he leapt out of his chair and threw a punch at property developer Sergei Polonsky, himself a one-time billionaire, during a television talk show.
He denied hitting Polonsky in the face although Polonsky fell to the floor and looked dazed.
Putin's spokesman, Dmitry Peskov, declined to comment. He had previously said that the Kremlin had not put pressure on Lebedev or other wealthy Russians over their business interests.
RULE NUMBER ONE
Lebedev's business interests in Russia include a bank and real estate assets; he owns a stake in state-controlled airline Aeroflot and has a potato farm.
Most rich Russians have avoided criticizing the Kremlin since the arrest in 2003 of former oil tycoon Mikhail Khodorkovsky, once Russia's richest man, after he defied Putin by taking an interest in opposition politics. Khodorkovsky's oil empire was broken up and sold off, and he is still in prison.
But with former Soviet leader Mikhail Gorbachev, Lebedev co-owns the Novaya Gazeta newspaper which has for years criticized the Kremlin and exposed corruption in Russia. Four of its journalists were killed between 2001 and 2009.
He says he is a victim of increasingly aggressive tactics to silence critics since Putin returned to the presidency for a six-year term in May, following the biggest protests against him since he was first elected president in 2000.
Other steps which the opposition says have targeted them include laws increasing fines for protesters, tighter controls of foreign-funded campaign groups and tougher Internet rules.
One protest leader, anti-corruption blogger Alexei Navalny, has been charged with theft and faces up to 10 years in jail. Another, Gennady Gudkov, has been expelled from parliament and could face two years in prison on charges of continuing his business activities while a deputy. Both deny the accusations.
A source familiar with the situation said that Lebedev was charged at the start of a two-hour-long procedure.
He was asked to sign a form limiting his travel but refused, citing his legal rights, the source said, adding that Lebedev did not intend to leave Russia.
A trial is expected to start in late October, the source said.
Lebedev's lawyer, Genri Reznik, told Ekho Moskvy radio the charges against the media magnate were "absolutely made up".
"I believe this is revenge for Lebedev's public activity, for his real counteraction of corruption, for publishing an opposition newspaper, for supporting Navalny ... He has many 'sins' (in the eyes of the Kremlin)," he said.
Lebedev says his efforts to sell off his business assets in Russia, because of pressure from the Kremlin, have so far failed because investors have been scared off by a "smear campaign".
His National Reserve Bank was searched by security service agents in February, and he says he has been under surveillance.
His son Evgeny Lebedev, who owns the Independent and Evening Standard, said in a statement the charge was "an extraordinarily disproportionate response" to the incident in the TV studio.
"My father has been targeted because of his determination to fight against corruption and to be a crusader for democracy in a country where this has not always been welcome," he said.
"I really hope that this does not presage a new phase of crackdowns on those who speak out against injustice."

A New Jersey legislator has introduced a bill that would allow towns to have a tighter rein over reality shows shooting within their borders and determine whether producers should chip in to cover law-enforcement costs, according to published reports.?
Oh, and he's also named his proposed bill after the pint-size star.

On Monday, Ocean County Assemblyman Ronald Dancer introduced legislation for what he's calling the "Snookiville Law."
Among its provisions, the law would enable towns to impose fees on reality-show producers to help cover the costs of beefing up public-safety measures, including hiring additional police officers for shoots.

Company backtracks on claims that malware was being preloaded onto PCs at factories
Microsoft researchers have gone back on earlier claims that they uncovered malware being installed on PCs during the production process.
Earlier this week Microsoft researchers claimed they had discovered insecurities in supply chain processes at PC manufacturing factories in China, which meant that malware could be installed on a PC while it was being built in the factory.
The company purchased 20 PCs and found malware already installed on four of them.
Contrary to its earlier claims the malware was most likely installed by a "distributor, transporter, or reseller," the company's Digital Crimes Unit has now said in a statement.
Among the malware discovered was Nitol, which targets bank account details.
The discoveries resulted in Microsoft gaining authorisation to shut down a domain - 3322org - which it said was running hundreds of different varieties of malware.
"We found malware capable of remotely turning on an infected computer's microphone and video camera, potentially giving a cybercriminal eyes and ears into a victim's home or business," Microsoft said at the time.
"Additionally, we found malware that records a person's every key stroke, allowing cybercriminals to steal a victim's personal information. The Nitol botnet malware itself carries out distributed denial of service (DDoS) attacks that are able to cripple large networks by overloading them with Internet traffic, and creates hidden access points on the victim's computer to allow even more malware - or anything else for that matter - to be loaded onto an infected computer," Richard Boscovich, sssistant general counsel, Microsoft Digital Crimes Unit, added.

NEW YORK (Reuters) - A Siberian tiger critically injured a man who jumped into the big cat's den at New York City's Bronx Zoo on Friday, retreating only after emergency workers scared it off with a fire extinguisher.
The man, 25, was riding the zoo's elevated monorail in the afternoon and leapt from a car, clearing a fence around the tiger enclosure, according to a statement from the zoo.
He was taken to a local hospital and was in critical condition, the New York City fire department said.
Zoo and fire officials said the man received bites or puncture wounds on his arms, legs and the top of his shoulder on his back during the approximately 10 minutes he was alone with the tiger.
"One leg was severely injured," said Frank Dwyer, a fire department spokesman, although he could not confirm early reports that the man lost a foot in the incident.
In rescuing the man, the zoo's emergency workers used a fire extinguisher to repel the tiger, then ordered the man to roll under an electrified perimeter wire to safety. The staff had been prepared to use deadly force if necessary, zoo director Jim Breheny told a televised news conference.
"If not for the quick response by our staff and their ability to perform well in emergency situations, the outcome would have been very different," the zoo said.
The tiger involved is an 11-year-old, 400-pound (180-kg) male named Bachuta, Breheny said. The director said the zoo will review the incident but will not put the tiger down or take it out of the exhibit.
Breheny said the incident was "just an extraordinary event that happened because somebody was trying to endanger themselves."
"The tiger did nothing wrong in this case at all," he said.
Earlier this year, tigers at a Danish zoo in Copenhagen killed a man who scaled a fence and crossed a moat to get into their den in July, and wolves at Sweden's largest zoo killed a zookeeper in their enclosure in June.

Up next, an entirely different kind of food problem. Recycling paper and plastic, as you know, is an effective way to save money and energy. So why not recycle all the uneaten food that goes to waste? And there is an awful lot of it. Forty percent of the food in the U.S. today goes uneaten, which means Americans are throwing out the equivalent of 165 billion - with a B - billion dollars worth of food each year. But that's not all. Food waste, as it decays in landfills, also produces methane, which is a potent greenhouse gas.
So what can we do to cut back on food waste? Dana Gunders is a food and agriculture project scientist at the Natural Resources Defense Council in San Francisco. She's also author of an NRDC report published last month called "Wasted: How America is Losing Up to 40 Percent of Its Food from Farm to Fork to Landfill."

FLATOW: Thank you. Jonathan Bloom is author of wastefood.com and "American Wasteland: How America Throws Away Nearly Half of Its Food (and What We Can Do About It)." He's joining us from Durham, North Carolina.
Welcome to the program.
JONATHAN BLOOM: Thanks for having me.
FLATOW: Well, that is a tremendous amount of food wasted. I don't think anybody really understands, Dana, that there's this much wastage going on.
GUNDERS: It's true. It's - it was surprising to me, and I think it's as surprising to most people who hear it, that we are throwing away just mountains of food.
FLATOW: Has this increased over the years, or has this remained constant?
GUNDERS: No. We've seen an increase quite a bit. The estimate is that it's about 50 percent more food that's wasted today per person than in the mid-'70s.
FLATOW: Jonathan Bloom, do people know that they're throwing out good food? Or do they think, oh, it looks a little brown or it's this, I should just throw it out anyhow?
BLOOM: No. We often don't tend to realize that we're throwing away perfectly edible food, especially when we're paying attention to those expiration dates and when we're thinking of those as the gospel truth, we're going to be throwing away a whole lot of good food. I think we have lost some of those traditional food ways, so we might not know when something's good or not. And the prevailing attitude tends to be when in doubt, throw it out.
FLATOW: When in doubt, throw it out, even though...
BLOOM: Yeah.
FLATOW: ...the expiration date is a little conservative?
BLOOM: Oh, yeah. There's a lot of wiggle room built in to those expiration dates, and in fact, most of them actually speak to food quality, not necessarily food safety.
FLATOW: Well, let's talk about some of the negative impacts of food waste. What are the main things that we should be concerned about?
BLOOM: Well, you mentioned the methane emissions at the top of the show when we do send food to the landfill. But more important than that are the resources that go into growing that food that then go for naught when we don't consume them.
So if - in particular, I'm thinking about the tremendous amount of petroleum that goes into - all steps of the food chain, and the water usage that is increasingly common and is an increasingly scarce resource as our planet warms, and in addition the land, the soil fertility that we are just squandering by growing fence row to fence row.

I mean, over half the land area in the U.S. is dedicated to food production, and over 80 percent of the water that we consume goes into growing our - are producing our food. So when we throw out, say, half a hamburger, according to an estimate by the Water Footprint Network, that's equivalent to taking over an hour shower in the water use that was required for that half hamburger you just tossed.
FLATOW: An hour?
BLOOM: And actually, I have another image for you in terms of water use, in terms of the water embedded in the food that we throw out. Well, annually, we are wasting the equivalent of two times the volume of Crater Lake...
FLATOW: Wow.
BLOOM: ...through the food that were not using.
FLATOW: Wow. OK. So what - let's talk about some of the things we can do as individuals, Dana Gunders, to reduce the amount of food waste. What should we do?
GUNDERS: Sure. Well, I think, you know, we can start in our own refrigerators and our freezers. Oftentimes, people don't think that when something's about to go bad and they, at the last minute, decide to go out to dinner, they can just throw their leftovers into their freezer. We can freeze almost anything.
Really, learning when food goes bad, as Jonathan was mentioning, those expiration dates are just suggestions for peak quality. Very few of them are actually indications that the food has gone bad. So learning more about those and planning better and really thinking about what you're going to eat, and when you see that, you know, exciting promotion at the store, stop and think: Am I really going to get around to eating that this week?
FLATOW: There are people who like to compost their food. How different is composting in terms of being a better way than allowing it into the landfill? Are they not equivalent, Jonathan?
BLOOM: Well, composting is certainly a positive use of the food waste that we do create. And let's face it, we're always going to have some food waste. But more important than that is trying to actually reduce the amount of waste that's created, and so it's kind of like that reduce, reuse, recycle mantra.
FLATOW: Right.
BLOOM: Well, you know, there's a reason reduce is the first item mentioned. But certainly, it's better than sending it to a landfill.
FLATOW: Yeah.
BLOOM: We are getting those nutrients back into the soil and essentially recycling them. So it's definitely a positive way of reusing the resources in our food.
FLATOW: Let's - before we take the break, here's a tweet from Jenna Harrison(ph) that says: Schools throw away huge amounts of food. How much - now, let me expand that. How much institutional food is wasted that could be saved? You know, hospitals, schools, other places - cafeterias, things like that.
BLOOM: Oh, yeah. Well, there's a tremendous amount of waste in that institutional setting. And in some cases, it's unavoidable, when, let's say, you have to serve a certain number of calories to patients or school kids. But there are ways around it. And the more choice people have in their food service, the less waste there is.
FLATOW: I guess for some - for health reasons, you just can't recycle - I mean, no one's going to eat that food again. It's just going to waste.
BLOOM: Yeah. Well, I have heard stories at, say, the elementary school level where you'll have a table set up and people could put food that they're not going to eat onto that table, and it's kind of like leave one, take one situation. And, I mean, the sad thing is when you go into most any school in America, you look in the trashcan and you see untouched fruits and unopened cartons of milk, and those are certainly items that other people could be eating. There are some legal hurdles if you're going to be distributing it elsewhere, but certainly, within that cafeteria, we can all share and reduce some of the waste that's created.

Jonathan, can we prevent, you know, on a city or municipal or state level, can we prevent the food from - the wasted food from getting into the landfills in the first place?
BLOOM: Oh, certainly. There's a couple of ways you can do it. Curbside composting is already happening in San Francisco, Seattle and a couple other municipalities. And it's not all that difficult. It's simply asking people to take one more step in addition to recycling to just separate out their food waste. And there's a real opportunity for cities and towns to save money. Instead of paying to send it off to a landfill somewhere, you can actually get a reusable product out of it and save money on your parks and rec, having to purchase FLU amendment.
FLATOW: Mm-hmm. Is there any engineering challenges creating a new system to deal with all this waste?
BLOOM: Well, a lot of places aren't necessarily doing it themselves - a lot of cities, that is. They're usually sending it off to composting facilities. But there's a real opportunity there for municipalities to create their own. You know, they would save a whole bunch on actually having to ship it somewhere.
But even more than composting, I love to see an increase in anaerobic digestion, and that's basically just harnessing that methane gas to create energy. So you hear a lot about waste-to-energy plants, which is kind of a euphemism in that they're just burning stuff. But - and they're not all that efficient at capturing the energy. But anaerobic digestion is a much better use of that food waste and, you know, we've put all those resources into producing our food. Why not treat our food waste as, in fact, another resource?
FLATOW: Oh. So instead of a landfill, you engineer this giant building where you throw the stuff into it, it gets digested, and out comes methane that you're going to use later.
BLOOM: Yeah. You can use it to power a building's heating or cooling system. You can turn it into electricity and send it to the grid. There's a whole bunch of uses.
FLATOW: Now, Starbucks recently announced a plan to convert its coffee grounds and unsold pastries into plastics and laundry detergent. What about that?
BLOOM: Yeah. Yeah. So there's so many uses for this material, this food that we are wasting. There's a lot of room for opportunity, a lot of room for innovation. And right now, we are actually only recycling 3 percent of the food waste we do create. So, you know, if we're going to be wasting food as much as we are - which hopefully will cease and reduce. But if we are going to have as much waste as we do, you might as well do something with it.
FLATOW: Now, Dana Gunders, any thoughts on that?
GUNDERS: Yeah. I certainly think that composting or anaerobic digestion are both great uses of the waste. But I would really love to see us focusing more on how do we streamline our food, you know, system so that we don't generate nearly as much waste as we do currently.
FLATOW: In other words, when you go shopping, that's where the waste starts.
GUNDERS: Well, it actually starts long before you go shopping. You know, it starts on our farms, where sometimes fresh produce doesn't even get harvested because of market dynamics and pricing. Farmers, when the price is too low, are not able to afford to harvest their crops, because they're won't make up the difference in price.
FLATOW: Mm-hmm. And when you go to the supermarket, if you - how many of us - we all have done this. We buy stuff and we never take it out of the package, and it goes bad in the refrigerator. We're not planning well.
GUNDERS: It's true. I think, you know, more frequent shopping can help, actually planning your meals. There are some great resources out there that help you plan a week of meals. And, you know, if one recipe requires cilantro at the beginning of the week, you use another recipe that requires cilantro three days later. So that whole bunch you had to buy.
FLATOW: And if you buy that head of lettuce and the outside leaves are brown, don't throw out the whole head. Just get rid of that - those rotting leaves, and the inside's still good.
BLOOM: Yeah. And when you get rid of them, of course, you're composting them, not throwing them away. But, yeah, no, there's a tremendous amount of opportunity there to use what you have. There's this idea of eating down your fridge. And before you go shopping, you're looking and seeing what you have on hand. And chances are, as we heard earlier, there's going to be a whole bunch of produce that we bought last week with the best of intentions of cooking a healthy meal. And then, as most people do, you get a little busy and that stuff kind of gets pushed off and it's tomorrow. OK. And then it's the next day. And then, you know, that day never comes before the ends up squishy and in a different color.
FLATOW: But what...
GUNDERS: And I just like to point out that...
FLATOW: Sure.
GUNDERS: ...this, you know, it also speaks straight to our pocketbooks. It's - we not doing the accounting, typically, but we're spending money on that head of lettuce or, you know, that gallon of milk. And when you're not using it all, that's good money you're throwing in the thrash. And there's some great resources out there. A cookbook came out recently called "The Frugal Foodie," you know, and so this is really about using your food budget as best as you can.
FLATOW: Yeah. What about feeding, you know, livestock with waste food that we normally would throw away? Won't they eat it?
GUNDERS: Sure, it will.
BLOOM: Yeah. That's a great use for it, sure.
FLATOW: But we don't have - do we have a mechanism for getting, you know, recycling that kind of stuff?
GUNDERS: If you have backyard chickens, that sure helps...
(LAUGHTER)
GUNDERS: ...which we're seeing more of in cities these days. But - and, you know, back farmers do that often. But unfortunately, a lot of the food that's going to animal feed is produce, you know, peaches and other produce that is just slightly, you know, maybe misshapen or has a little bit of a scar on it and are really perfectly edible. And I think, you know, a higher or better use of this for that to be going to the human food. And if we didn't have such strict standards in our grocery stores and that we are using to choose our produce, we would be reducing waste in the system as well.
BLOOM: Yeah. And strict standards in - at the store level and for manufacturers, but I do think that we as individuals should share some of the blame. And we're demanding that level of perfection in our food, and it's reached a point where we care about the appearance more than the food items taste. And so that desire for that beautiful apple means that along the way, throughout that food chain, countless apples are not ending up at the store.
FLATOW: Let's go to Parker(ph) in Charlotte. Hi, welcome to SCIENCE FRIDAY.
PARKER: Hey, how it's going? I just want - I really love your show, so I'm glad to be able to finally actually be on the air. But I just wanted to mention, I worked in the restaurant industry for just about the last five years in my life. And something - I've worked at different restaurants and something I realized out of that industry is that a lot of time you get a huge amount of waste specifically from the restaurant themselves. And, you know, I - a lot of the time I've worked at these restaurant, and I've mentioned to them, hey, can, you know, can we take this waste? Can we do something with it? And I've just - all of them tend to say that it's a huge - it's a legal hurdle. I think, Dana, you may have mentioned that earlier on. It's a huge legal hurdle. Is there anything that we can do to overcome sort of that specific legal hurdle that would reduce - to reduce the waste of food that can't be immediately distributed?
BLOOM: Well, I...
GUNDERS: Well, I think there's a...
BLOOM: Yeah, go ahead.
GUNDERS: Sorry. You know, there's a little bit of misperception out there. So there is a law called the Good Samaritan Act that does protect businesses that donate food from any kind of liability associated with someone getting sick, for instance, from eating that food. And many businesses just aren't aware of that. So part of it is awareness. And, you know, they can't donate the food that's out there once it's served. But anything in the backroom can be donated actually.
FLATOW: All right. Aren't there companies like City Harvest that go around to restaurants and get their food and bring them and give it to people who can't afford to eat?
BLOOM: Yeah. There's a whole network of food recovery operations. Pretty much every major city has one. But when I've talked to these folks and gone around with them, and they say they're just recovering a fraction of the available food out there. And it's definitely a timing game at that point. A lot of the available leftovers will come available close to midnight or late in the night. It's just a difficult logistical hurdle to recover them. But in terms of liability, Dana's dead on. There's really no fear of being held liable when you donate something that you deemed to be in good shape.
FLATOW: And so are you optimistic that this is - anything is going to change? Or are we just going to muddle through on it?
BLOOM: I think if the price of food continues to rise, that will have a real impact on how we approach our food. I think that's one silver lining to the rising cost of food. We might be less wasteful with it. And certainly, as the planet grows, we're going to become more efficient with the food we have. You don't see that on the day-to-day level, but when you're speaking globally, you know, you think about the estimates for 2050 with about 9 billion people, maybe even more are going to be around, you know, when we talk about how we feed all those people, the conversation immediately turns to increase production. But from my standpoint, it seems like we should focus on efficiency before we think about growing more food.
FLATOW: Yeah. Dana Gunders, last words?
GUNDERS: Yeah. Well, I agree with Jonathan that, you know, I think this is an ideal time to be talking about this. We're in the midst of a drought and expecting to see rising food prices. We're also at a time when one in six Americans are, you know, what we consider food insecure and, you know, rising concerns over obesity and portion sizes as you were discussing in your last segment. And all of those tie in really well to looking at the food waste question and really taking another look at what we're buying, what we're actually eating, and how our whole food system works.
